Raw Vegan Mango Pie

OMG! This pie turned out INCREDIBLE.

A couple of weeks ago, we hosted a gathering and a woman brought this incredibly yummy pie. She gave me a brief description of her process and told me she'd get me her card to connect but vanished into the night, never to be heard from again. :( I'm not sure who she came with and haven't been able to find her, but this pie was to die for. So... I gave it a shot and made my own version, It's raw, vegan, easy, healthy, and SO delicious!

Ingredients

Crust

1 cup (around 15-17) pitted dates roughly chopped

2 cups pecans


Filling

5 oz Dried mango

5 oz Dried coconut flakes

Water

1 ripe banana

1 fresh mango


Topping

Fresh fruit and berries


Directions

  1. Put dried mango and coconut into a bowl and cover with water by an inch, then set aside for 20 minutes.

  2. Add dates and pecans to a food processor and pulse until uniform.

  3. Press mixture with your hands into a pie dish.

  4. Drain the mango and coconut mixture then add to a food processor with banana and mango until smooth and creamy.

  5. Spoon fruit mixture into the pie crust.

  6. Decorate with fresh fruit and berries, then place in the fridge for an hour.

  7. Serve!


Notes

*Use any kind of nuts ~ walnuts, cashews, and almonds all work well too!

*Don't have fresh mango? I imagine thawed frozen mango or fresh peaches would work well too. Yum!

*I used frozen fruit to top mine. Again, use whatever you have on hand!


I'm excited to try all sorts of iterations of this pie! Maybe banana cream with bananas, coconut cream and spices! Maybe strawberry cheesecake with fresh strawberries and cashew cream! I encourage you... experiment! Be creative in the kitchen! And let me know how it all turns out.
