High-Vibe Healthy Pancakes


High-Vibe Healthy Pancakes topped with organic maple syrup, berries, and coconut kefir.

These pancakes are rich in vitamins, minerals, fiber, and omega-3s, while also gluten-free, dairy-free, sugar-free, and egg-free. Topped with real organic maple syrup and maybe some fruit, you'll be glad you skipped the pre-made mix and took the time to make this hearty, nutrient-dense version. High-Vibe Healthy Pancakes Recipe

20-30 minutes, 8 pancakes


Ingredients

  • 1 ripe banana (mash with a fork)

  • 1/2 cup millet flour *see notes

  • 1/2 cup buckwheat flour

  • 1 cup almond flour

  • 2 Tbsp flax meal

  • 1/4 tsp baking powder

  • pinch of salt

  • 1.5 cups of water

  • Coconut oil or ghee


Directions

  1. Pre-heat a large skillet or griddle over medium heat on the stovetop for about 10 minutes, meanwhile...

  2. In a large mixing bowl, mash the banana with a fork then add remaining ingredients and mix. The batter will be thick.

  3. Put 1-2 Tbsp of coconut oil or ghee in the pan to melt.

  4. Pour the pancake mix into the pan, making each pancake about 5 inches in diameter, slightly larger than a sand-dollar. Be sure to leave room between the pancakes so they are easy to flip.

  5. Cook pancakes until golden brown, about 3-4 minutes on each side. They will be slightly soft in the middle but will set up as they begin to cool off.

  6. Serve!


Notes

  • You can buy millet flour or grind whole millet in a coffee/spice grinder. I prefer to grind my own as I like a slightly grittier finish in my pancakes ~ feels more wholesome that way!

  • If you make them in batches, be sure to add new ghee or coconut oil between batches.

  • When I make these in batches, I will sometimes make them all and then reheat them in a toaster oven prior to serving.

  • Sometimes the pan gets too hot and you may need to adjust the heat down.

  • Top with fried apples, bananas, jam, cinnamon, or a dollop of coconut kefir. Yum!
