OMG! Walnut Taco Meat


I LOVE this recipe. I used to make walnut meat taco salads all the time for my summer yoga retreats and it was a hit with my students every time. Even though I eat meat, I actually prefer this simple and easy vegan walnut taco meat over spiced beef, every time. I consider this more of a summer recipe but we had vegetarian guests for dinner last night and Patrick insisted on Walnut Meat Tacos.


This nut meat is great, not just on tacos but taco salads too. The first picture is from dinner last night and the second is from a retreat lunch that I made years ago. I hope you enjoy this recipe as much as I do. Let me know!




OMG! Walnut Meat

10 minutes, 3-4 servings


Ingredients

  • 2 cups walnut pieces

  • ¼ c extra virgin olive oil

  • ½ tsp liquid aminos or soy sauce (or salt & a splash of water)

  • juice from half a lime, or 1 tsp

  • 2 Tbsp taco seasoning



Directions

  1. Mix all ingredients together in a bowl, then add mixture to the food processor.

  2. Pulse all ingredients together until mixture looks similar to the texture of ground beef. Be prepared to open the processor, scrape down sides and mix up the contents by hand before pulsing again. You may need to do this several times.

  3. Taste & adjust seasoning. Soy sauce makes it salty; lime juice makes it tangy; olive oil makes it less dry, and more taco seasoning adds zest.

  4. Serve in salad or tacos.

Notes

  • You can soak the walnuts ahead of time in water for a softer texture and better nutrient absorption but this step can be skipped in the interest of time.

  • You can make your own taco seasoning if you do not already have a spice blend on hand. Typical spices include chili powder, cumin, onion powder, garlic powder, paprika, oregano, salt, black pepper or pepper flakes ~ use what you have on hand and adjust to taste.
