This colorful and flavorful vegan meal was inspired by one of my favorite foods: Thai Summer Rolls, also known as Fresh Rolls. One summer while living in Seattle, I nearly lived off these, sampling a new Thai restaurant almost every day. I got to know them very well! They are so light, refreshing, and full of flavor.
Last week, I saw the Pad Thai noodles in my cupboard just begging to be used and I thought to deconstruct my favorite rolls and make them into a salad. Voila! Here it is. I ate three bowls today for lunch.
