This is one of the EASIEST cookie recipes out there! It's also gluten-free, dairy-free, and refined sugar-free, and yet still delicious! It's a go-to in my house for a sweet and salty chocolate-fix since I keep all of these ingredients on-hand, and then of course it's so quick and easy to prepare.
Simple Salty Almond Cacao Cookie Recipe
(12-14 Cookies, 15 minutes + 1 hour minimum cooling time)
Ingredients
2 cups of almond flour
5 Tbsp coconut oil melted
4 Tbsp maple syrup
1/2 cup cacao powder
1/4 tsp sea salt*
Directions
Combine all ingredients in a bowl and mix until it forms an oily dough.
Gently form the dough into golf-sized balls, using your hands.
Place them onto a parchment-lined baking sheet, keeping them about an inch apart.
Flatten the dough balls out by using a fork to gently press a hash pattern on the top, similar to peanut butter cookies.
Bake at 325F for 10 minutes.
Remove from oven and let cool for at least an hour before eating. Overnight in the fridge is even better.*
Notes
I like Celtic Grey sea salt in this recipe.
Be sure to allow plenty of cooling time for these cookies. They are delicate and will fall apart if they are not allowed to properly cool.
