Dairy-free, Egg-free, Flourless Dark Chocolate Cake (made with sweet potato!!!)

Can you believe that something so delicious began with sweet potato?!

Inspired by a sweet potato brownie I had recently, I did some experimenting and came up with this flourless chocolate cake. It was such a hit, I've actually made it three times in the last couple of weeks to share with dinner guests, who've all been amazed. Not only is it on par with the kind of cake you'd get in a fancy restaurant but it's actually better because it's dairy, gluten, egg, and even nut free! It's also really easy to make!
