Cucumber Noodles with Garlic Tahini Sauce

This salad is my new addiction. Now that temps are increasing, I see myself eating this on the regular, throughout the hot summer months. Not only is it lemony-sweet-garlicky OMG-delicious, but it feels nourishing and revitalizing while leaving me full of energy. Total winner!

Cucumber Noodles with Garlic Tahini Sauce Recipe

(4 servings, 10 minutes)


  • ½ c tahini

  • ½ c lemon juice

  • 3 Tbsp water

  • 4 cloves garlic pressed/fine mince

  • 1.5 Tbsp maple syrup

  • ¼ tsp salt

  • 3 cucumbers

  • ¼ cup fresh chopped flat leaf Italian parsley

  • A spiralizer


  1. Combine ingredients tahini through salt to make the sauce. You can put it all in the blender or mix by hand with a whisk.

  2. (Optional) Remove some or all of the cucumber skin in lengthwise strips before spiralizing. I like to remove about half of the skin in lengthwise strips.

  3. Reserve a little parsley to garnish individual servings. Use your hands or a fork mix the sauce, the spiralized cucumbers and the rest of the parsley together.

  4. Garnish with reserved parsley and serve!
