Classic Chili Recipe

(30 min, 8 bowls) Ingredients

  • 1 large onion, diced

  • 1 lb ground beef or bison

  • 7 cloves garlic, minced

  • 1 - 15 oz. can pinto beans

  • 1 - 15 oz. can kidney beans

  • 1 - 28 oz. can diced tomato

  • 2 cups beef broth

  • 1 Tbsp cumin

  • 2 tsp coriander

  • 2 tsp salt

  • 1 tsp oregano

  • 1 tsp black pepper

  • 1 tsp paprika

  • 1/4 tsp cayenne

  • 4 Tbsp maple syrup

  • 2 tsp ACV

  • 1 Tbsp arrowroot

  • 1/4 c cold water

  • optional garnish: diced avocado, diced red onion, chopped chives, nutritional yeast, or cheese, chopped tomatoes...)

Directions

  1. Cook ground meat and onions in a large stewpot over medium heat until beef is no longer pink, about 5-7 minutes. Break up the meat and incorporate the onions as it cooks.

  2. Stir garlic into the pot and cook until fragrant, about 1-2 minutes.

  3. Add the beans, tomatoes, beef broth, and all the spices (cumin through cayenne), along with the maple syrup and apple cider vinegar and mix together.

  4. Increase the heat to high until boiling and then reduce heat to low and simmer for about 10 minutes with the lid on.

  5. Mix the arrowroot and the water until thoroughly mixed/dissolved, then stir it into the pot. Cook until the chili thickens and then remove from heat to cool.

  6. Serve in individual bowls and garnish. Enjoy!
