Yesterday a friend brought us two paper bags full of chicken of the woods mushrooms she harvested from an old oak tree in our yard. She kindly fried up a little for us to enjoy when I thought to make a chicken of the woods vegan chicken salad. Here in the Eastern United States, these bright orange treasures can be found growing on oak and other hardwoods primarily during the summer and autumn months.
